ALmond or Sunflower Oatmeal Cookies

Ingredients

  • 2 cups whole wheat flour
  • 2 cups rolled oats
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup brown sugar
  • 1 cup almond or sunflower butter
  • 1/2 cup molasses
  • 3/4 cup vegan milk (rice, hemp, almond...)
  • 2 teaspoons vanilla extract
  • optional ingredients: carob or chocolate chips
  • crushed walnuts

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a bowl, mix the flour, oats, salt, sugar, and baking soda
  3. In a separate bowl, mix the remaining ingredients (minus the optional ingredients)
  4. Combine the wet and dry until fully mixed. The dough should be super moist and thick
  5. Add in any chocolate chips or nuts
  6. Scoop out 1 tablespoon-size portion of dough, roll and place on a cookie sheet
  7. Bake for 8 - 12 minutes, until the cookies have spread, and the bottom is not burnt!
